October 2006, Highland Brewery began operations in a larger, more efficient brewery in east Asheville. This new larger Brewery was converted from an existing warehouse, and an additional 35 degree Fahrenheit cooler was added to the warehouse.

Highland brews twice daily, three days per week in a "Santa Rosa" 50 barrel brew system. They bottle at least once a week, packing 2,000 cases or more. In the larger brewery, much more equipment was added to the bottling line. They can fill about 360 cases an hour in the new brewery.
